Home-made Pelmeni

My first home-made Pelmeni – dumplings consisting of a delicious filling (minced meat, onion and spices) wrapped in thin dough. There are various recipes around the Internet, therefore I’d rather describe the process, which I find fascinating.

You knead the dough and while it rests for about 50-60 minutes, you focus on preparing the filling. Then you roll out the dough thin, cut it into small circles and wrap a bit of the filling inside each circle. It is the socializing element – everyone around is involved – and doing them under the guidance, in my case, of a most charming Russian lady, added a special flavour. Boiling the pelmeni in water with herbs is the most fascinating part – they are ready when they swim up. You serve topped with cream.

 

Tuga Bar

Tuga is how the Portuguese are referred to. Tuga Bar in Sofia is run by a real Tuga lady and it offers traditional Portuguese dishes and drinks. The deserts are simply irresistible and the sound of fado complements the overall homey atmosphere. Their home-made sangria was delicious. I personally went for Port wine – a “must” taste there! Felicidades!
